Hi Everyone! For this weeks healthy meal prep I have some high protein meals that have LOTS of veggies! These recipes are easy, and can be easily adapted to what you have available. I hope that this give you some meal prep ideas!
LET’S GO
RECIPES:
Sausage and Vegetable Roast
4 Aidells Chicken Apple Sausages (or sausage of your choice), chopped
1 Bell Pepper (I used half green, hals orange), chopped
3 c. Baby Potatoes chopped
1/2 Onion of your choice chopped
A couple handfuls of chopped spinach
Avocado Spray
1.5 Tbs. 21 Seasoning Salute (Trader Joes) or seasoning of your choice
Salt and Pepper
Preheat the oven to 425F. Chopped sausage and vegetables and place on parchment lined pan. Spray with avocado oil enough to lightly coat everything. Add seasoning and mix together. Bake for 15-25 minutes. Remove from oven and turn the oven off. Stir in chopped spinach. Once oven has cooled slightly, add pan back into oven ling enough of the spinach to wilt completely.
