INGREDIENTS + NOTES

#1 Lazy Avocado ‘Sushi’ Snack 0:39

ricecake(s)
ripe avocado, cut into chunks
a drizzle of soy sauce
a sprinkle of roasted sesame seeds
optional: a sprinkle of roasted seaweed sheet, ripped into bits
→ also really yummy as an avocado toast variation!

#2 Sweet Mango Berry Ricecake 1:28

ricecake(s)
vegan cream cheese or thick vegan yogurt
strawberry jam (no chunks if preferred)
fresh mango chunks
optional: roasted sesame seeds

#3 Vegan Corn Fritters 2:00

½ cup (60g) flour
2 ½ tbsp cornstarch
½ tsp baking powder
¼ tsp salt
other spices of choice, i added 1 dash of each: black pepper, cumin
1 can of corn (300g = 10.58oz)
2 tbsp fresh chives
1/8th cup (30ml = 2 ½ tbsp) non dairy milk
1-2 tbsp oil for the pan
hummus, vg cream cheese for serving

→ yields ~7 corn bites

#4 Strawberry Ginger & Lemon Water 3:17

½ cup freeze dried strawberries (15g)
1 tsp lemon zest
3-5 slices of fresh ginger
optional: fresh lemon juice (½ – 1 lemon)
optional: 1 tbsp rice syrup or maple syrup
3 cups water (750ml)

#5 Peanut Butter Chocolate Chip Oat Cookies 4:50

1 cup oats (90g) → turned into 1 cup (90g) oat flour
1 ½ tbsp cornstarch
½ tsp baking powder
generous pinch of salt
⅓ cup creamy peanut butter (80g)
3 tbsp softened vg butter (50g)
⅓ cup brown sugar (60g)
1 big handful dark chocolate chunks
→ yields 7-8 medium sized cookies

#6 Homemade Tortilla Chips + Minty Bean ‘Salsa’ Salad 6:48

for the chips:

3-4 corn tortillas, cut into desired size
oil for the pan, if preferred

for the salad:

2 tbsp olive oil
2 tbsp lemon juice, or more if needed
generous pinch of salt, to taste
spices of choice (pepper, cumin, chili flakes, turmeric)
1 bell pepper
150 g tomatoes (5.3oz)
1 small handful fresh mint
1 tbsp finely chopped pickled jalapeños (or to taste)
optional: 1 shallot, finely chopped
1 can brown lentils (400g = 14oz)
1 can black beans (400g = 14oz)
→ serves 4 as a snack, serves 2 as a meal?

#7 Lemon Cake Iced Matcha 8:27

1 tsp matcha powder
¼ cup (60ml) hot water
½ tsp fresh lemon zest
1 tsp brown sugar
¼ cup (60ml) cold water
non dairy milk, about ½ cup (125ml)
large handful of ice cubes
→ serves 1
