Chef Paul Reilly’s new restaurant at the Hyatt Centric Downtown Denver will be open on December 24 and 25, serving a prime rib dinner complete with a 16-ounce Painted Hills Ranch beef prime rib with potato soufflé, glazed root vegetables, roasted garlic head and bone marrow jus plus chocolate-chestnut cake for dessert. The meal is $74 per person; a limited à la carte menu will also be available.

The Feast of the Seven Fishes returns to chef Paul Reilly’s Italian eatery December 22-24. The restaurant’s take on this traditional Italian-American feast includes three-course meals featuring multiple seafood dishes like frutti de mare salad with shrimp, mussels, squid, Calabrian chili, orange and radicchio, and tagliolini with local butter, bottarga and arugula. The meal is $69 per person and will be available for dinner alongside Coperta’s regular menu. Coperta opens at 5 p.m. for dinner and 4 p.m. on Christmas Eve.

Starter selections include a trio of Chef Creek oysters, foie gras torchon or a parsnip soup; entrée selections are Cajun chicken, wild boar tenderloin, Alaskan halibut or Teres Major bistro filet; and dessert options are Bûche de Noël, a cheese plate, petit fours or a classic crème brûlée. The meal is $105 per person, with optional wine pairings for $75. A special kids menu will also be available for $30 per child.

Pickup is available December 22 and 23, and pie options include ham, turkey and beef bourguignon as well as brown butter pumpkin, chocolate pecan and caramel apple crispy for $35 each. You can also opt for packages that include wine, al a carte wine and cocktail add-ons, as well as take-and-bake lasagna dinners.

There is also a sides and dessert-only option for $45 per person, and you can add mixed sixpacks of local beer and bottles of wine.
