Set dosa is a very healthy, nutritious dosa. This dosa recipe calls for the usual dosa ingredients along with one extra ingredient that makes it soft, pillowy soft and spongy.
The Set dosa is so nutritious that it can be given to a 10 month old baby too!
Along with the set dosa recipe, I have also shared with you the recipe of an tomato onion chutney that makes a perfect match for the Set dosa.
The trick to getting a perfectly spongy set dosa is the right fermentation of the dosa batter. The set dosa batter should double up in size before you make dosas out of it.
Set dosas are like pancakes, so they do not need to be spread out but only poured over the tawa.

Recipe :

Set Dosa
Preparation time: 20minutes + fermentation time
Cooking time: 4 -5 minutes per dosa

Ingredients:
2 cups rice
1/2 cup white urad dal
2 teaspoons fenugreek seeds
1 cup poha
2 tsp salt

Method:
Soak the rice and poha together in one bowl and the urad dal along with the fenugreek seeds in another bowl. Soak them for at least 6 hours.
After 6 hours, grind the urad dal and rice separately into a smooth batter.
Combine the urad and rice batter, set aside for at least 12 hours or overnight until the batter doubles in volume.
Heat a tawa over medium heat.
Pour a ladleful of batter over the skillet and allow it to spread on its own.
Cover the dosa with a lid and allow to cook in its own steam for a few minutes.
The dosa should like a pancake.
As the top is steamed and cooked through, remove it from the tawa and serve. Make the remaining set dosas & serve.
