Recipe: Paleo Thanksgiving Sandwich Made with Leftovers

Thursday might be the main event, but we’re all about the Thanksgiving leftovers! This Paleo-friendly sandwich brings your favorite fall flavors together in every bite, no cooking required. For a quick assembly, stock up on Paleo-friendly bread (or make your own loaf), then pull out your fixings like turkey, cranberry sauce, and sweet potato casserole. For an extra kick, slather on a dollop of garlic aioli as the finishing touch.

Yield: 1 sandwich
Active time 10 minutes

2 slices thick Paleo-friendly bread
2 tablespoons Primal Kitchen Garlic Aioli Mayo, divided
2 to 3 turkey slices
2 tablespoons sweet potato casserole, warmed
2 tablespoons cup Brussel sprouts, shaved
1 tablespoon cranberry sauce

On a work surface, spread 1 tablespoon garlic aioli on one side of bread; top with 2 to 3 slices of turkey. Dollop the sweet potatoes on top of the turkey, then nestle on the shaved Brussels sprouts, followed by the cranberry sauce. Drizzle the remaining 1 tablespoon garlic aioli over the cranberry sauce, then top with a second piece of bread. Slice and serve!
