KETO PUMPKIN DUMP CAKE
Serves: 9

15 oz can pumpkin puree
1/2 cup heavy cream
1/2 cup nut milk
5 eggs
1/2 cup sugar-free sweetener
1 teaspoon pumpkin pie spice
1 (9oz) package King Arthur Keto Cake Mix
3/4 cup unsalted butter, melted
1 cup chopped pecans

1️⃣ Preheat oven to 350 degrees Fahrenheit. Spray cooking oil into either a square baking dish or a 9×13 baking dish and line with parchment paper. Set aside.
2️⃣ In a large bowl, mix together pumpkin puree, heavy cream, nut milk, eggs, sweetener and pumpkin pie spice. Pour into prepared baking dish.
3️⃣ Evenly sprinkle keto cake mix on top of pumpkin mixture.
4️⃣ Drizzle melted butter on top of cake mix and top with chopped pecans.
5️⃣ Bake at 350 degrees for 40-50 minutes if using a 9×13 rectangle baking dish or 50-60 minutes if using a square baking dish or until cake is spongy on top but not jiggly when you move it.

KETO COCKTAIL WEENIES
Servings: 11

10 oz sugar-free BBQ sauce
5 oz sugar-free grape jelly
28 oz cocktail sausages

Add ingredients. Stir to combine.
Slow Cooker Instructions: Cover and slow cook on high for 2-3 hours.
Instant Pot Instructions: Add 1/4 cup water to prevent burning. Place the lid on, set valve to sealing and pressure cook on high for 10 minutes. Quick release pressure after done cooking. Stir. Set Instant Pot to Sauté mode and let cook until sauce has thickened.
Stove Top Instructions: Heat all ingredients in a saucepan over medium to medium-low heat. Let simmer for 15-20 minutes or until the cocktail sausages are heated through and sauce has thickened.

KETO LAYERED JELLO SALAD
Serves: 12

1 (0.7 oz) package sugar-free strawberry jello
1 tablespoon unflavored gelatin
2 cups sugar-free marshmallows
1/4 cup heavy cream
1 (0.7 oz) package sugar-free lime jello

1️⃣ Mix sugar free strawberry jello according to package directions and pour into a jello mold or square baking dish. Refrigerate for 1 hour or until set.
2️⃣ Mix unflavored gelatin with ¼ cup water in a small bowl. Let bloom for 3-5 minutes.
3️⃣ Transfer the bloomed gelatin to a larger bowl and pour in 1 cup boiling water. Stir to dissolve gelatin. Add marshmallows. Heat in the microwave at 30 second intervals, stirring in between, until marshmallows have dissolved. Stir in heavy cream. Let cool to room temperature before pouring on the red layer. Refrigerate for 1 hour or until set.
4️⃣ Mix sugar-free lime gelatin according to package directions. Let cool to room temperature and pour over white layer. Refrigerate for 1 hour or until set.
5️⃣ Right before serving, unmold the jello
