Hundreds and Thousands Biscuits Recipe
60 grams (2 oz) unsalted butter
⅓ cup granulated sugar
1 egg
½ teaspoon vanilla extract
1 teaspoon milk
⅔ cup self-raising flour
½ cup all-purpose flour
½ cup hundreds and thousands / sprinkles
¼ cup milk
1. Cream together butter, sugar and vanilla until well combined using an electric mixer.
2. Mix in egg, vanilla and milk and cream together until well combined.
3. Mix in flours until well combined.
4. Refrigerate dough for at least one hour.
5. Line large baking sheets with parchment paper and set aside.
6. Roll out dough until 5 mm (¼ in.) thick.
7. Cut into 5 cm (2 in.) circles with floured cookie cutter.
8. Preheat oven to 180°C (360°F).
9. Brush lightly with milk and sprinkle with hundreds and thousands, using the cookie cutter as a guide to contain sprinkles.
11. Bake at 180°C (360°F) for 8-10 minutes.
12. Remove from oven and allow to cool on the baking sheet, then transfer the cookies to a wire rack to cool completely.
